Fresh Trout Restaurants
For lovers of fresh fish, a visit to Kakopetria must certainly be combined with the gourmet experience of the locally farmed trout, which is on the menu of most of the restaurants in Kakopetria. It has fluffy, tasty flesh, lots of good fat (omega-3 fatty acids) and is cooked in a variety of ways.
The aquaculture of Iridescent Freshwater Trout is one of the characteristics of the Solea region that counts most freshwater aquaculture enterprises in Cyprus, due to the Klario river, which is one of the few rivers in Cyprus with a continuous flow throughout year.
Rainbow trout (Oncorhynchus mykiss), which is so named because of the many iridescent spots on its skin, is one of the main species reared in fresh water. Fish endemic to the American Pacific coast, transported to Europe in the late 19th century and today is reared in almost all European countries.
Iridescent trout is available in European markets during the year. Catches weighing up to 400 grams are available with white or pink flesh, whole or fillet, fresh or smoked. If they are bred for a longer period and reach a weight of 1.5 kilos, the rainbow trout is sold, like salmon, fresh (fillets or fish cakes) or smoked (sliced). In the latter case, the fish are subjected to cold smoke but also to hot smoking, especially in the case of freshwater trout in portion size. Salted trout eggs are also consumed, especially in northern Europe.
